Fish head and rice soup is a traditional fish dish that involves soaking leftover rice in a fish head broth in Sixian county of Suzhou.
The fish from Shilong Lake in Sixian county is delicate and tender. After the fish head soup is stewed in a casserole, one can spoon the soup into a bowl of rice and mix them together. One would be attracted by the fragrance and taste of fish broth and rice, and enjoy it with a good appetite.
